The sides are ground down low along the entire blade length, which makes it easier to cut out corners. The cutting edge has a 25 degree angle with a micro-bevel and is razor sharp and polished. The flat side is moothly ground. Best quaility steel hardened to 59-60 degrees HRC. The oil-finished octagonal handles with oval cross-section of strong elm wood rest perfectly in your hand
